Cranberry and Lemon Cake
Heat oven to 170C
6 oz butter 6 oz caster sugar 8 oz self raising flour
1 tspn. baking powder 3 eggs grated rind of 1 lemon
4 oz dried cranberries
Whiz all ingredients in a food processor.
Pour into 2 x 8 inch shallow cake tins and place in oven and bake approximately
45 – 50 minutes
When cool, sandwich together with strawberry jam
